Japan's 'Father of Edible Raw Eggs' Hiromitsu Katoh Committed to Bringing Japanese Egg Technical Sys

May 13 (newsonjapan.com) - In recent years, Japanese edible raw egg standard is having a positive impact on China, the world's largest egg producer and consumer.

Edible raw eggs are becoming popular among emerging middle class. As a well-known expert in Japanese laying hen industry, Mr. Hiromitsu Katoh is playing an increasingly significant role in the new trend of egg consumption in China. Employed by a unique and forward-looking egg brand in China— “Yellow Swan” as the chief scientist, he came to China at the age of 75 to personally guide and participate in the application and promotion of Japanese edible raw egg standard system in China.

Known as the "father of edible raw eggs" of Japan, Mr. Hiromitsu Katoh is one of the first-batch doctor of veterinary medicine (DVM) in Japan, the president of Japan Poultry Industry Science and Technology Research Association (JPISTRA), the founder and president of Poultry Products Quality Control (PPQC) Co. Ltd., and the visiting professor of Osaka University.

It is understood that Mr. Hiromitsu Katoh has been engaged in Japanese poultry industry for more than 50 years. Entrusted by the government to solve egg safety problems such as Salmonella, he founded PPQC in 1982, implementing Salmonella control (HACCP system), studying unknown poultry diseases, and confirming and promoting a number of new technologies. In the past 38 years, PPQC has served more than 700 million laying hens in Japan, set up a high standard of edible raw eggs, and almost eliminated all the egg safety problems, living up to the trust of the government.

The latest data released by Japan's Egg Export Commission (JEEC) showed that, 32-billion eggs were sold to customers per year in Japan, while the number of food poisoning cases caused by eggs and egg products decreased year by year, and only one case occurred in 2018.

Bringing more than 50 years of technical experience to Yellow Swan, Mr. Hiromitsu Katoh hoped that Yellow Swan’s eggs can meet the Japanese edible raw egg standard, and meanwhile more intensive poultry farms and family poultry farms in China can use scientific breeding technology, and high-quality standards and management concepts, and join hands to accelerate the quality upgrading of laying hen industry in China.
