Feb 20 (Japan by Food) - Shizuka and special guest Jesse explore the charming city of Matsumoto in Nagano prefecture. Famous for its original castle, Matsumoto is also well known for its production of miso, the fermented soybean paste.
After enjoying some local mochi treats, they head to the Ishii Miso Factory.
Shizuka and Jesse observe the step-by-step process of how miso is made. This staple of Japanese cuisine is essential for many types of Japanese food, especially for the preparation of miso soup.
