Jul 29 (REIYA Watanabe) - Preparation of bread begins before 3:00 in the morning. Undeterred by power outages, which are a common occurrence in rural areas, "Talmary" continues to produce about 20 kinds of breads full of originality today.
The bread is made with freshly ground flour using a huge flour mill in the bakery, and all bread is made with home-cultivated leavens. The owner, Itaru Watanabe, is a baker-turned-beer maker who also brews his own beer. The lees from the beer production process are used as beer yeast in the bread.
The bakery also operates a café where customers can enjoy home-roasted coffee and freshly baked pizza, and in 2022, a new hotel is opened to allow customers to relax and enjoy bread and beer.
