Dec 13 (The Staff Canteen) - After moving to the UK 25 years ago, Masaki Sugisaki made it his mission to educate and inspire the British audience about Japanese cuisine. He now runs Dinings SW3 in Knightsbridge, after previous experience at the renowned restaurant Nobu.
Masaki's style sees him combine European influences with Japanese culture and locally-sourced ingredients, for a unique take on his home country's cuisine. In this video, watch as Masaki creates a Cornish red chicken udon noodle dish and tuna carpaccio with autumn truffle, while head chef Sean Kimpson cooks Koji-cured venison loin.
