Toyama, Jan 28 (News On Japan) - Dried the old-fashioned way by harnessing Japan's winter cold, 'Mochi Sudare' has hit peak season in Nanto, Toyama Prefecture. A favorite among locals in this remote city just south of the recent earthquake zone, these 'frozen mochi' are rice cakes dried naturally for 3 months during the cold winter period.
The workshop uses freshly pounded mochi to create six types of frozen mochi, including varieties with gold sesame, black beans, and kelp.
Resembling a bamboo screen, these frozen mochi, dried for three months and hardened, can be enjoyed traditionally by grilling or frying, offering a nostalgic and rustic taste.
The peak of frozen mochi production is now, continuing until mid-February.
